#TALActiveMealtime - Chicken Fajita -


Personally, after all these years of healthy eating and training, I am rather indifferent to chicken. (Shock horror!) Please don’t call the food police, but I admit there are only so many ways of cooking chicken now that aren’t boring for me. That isn’t all the chickens fault, my limitations as a chef are the issue. So for today’s Active Mealtime we are ringing the changes of moving away from ‘chicken breasts and broccoli’ and considering how we can make chicken EXCITING again. The solution..? See below!

Enter The Chicken Fajita Wrap. In around 20-30 minutes, and utilising a few fresh ingredients, you can create a healthy, tasty, protein filled meal that is also stuffed with fresh vegetables and will keep you fuelled for ages! (Going to make this? Show us! #TALactivemealtime)

For this feast, you will need the following…

The Recipe:

Fajitas

500g Chicken breast cut into strips
2 tsp coconut oil
1 cup Mushrooms
½ Red pepper, chopped
½ Green pepper, chopped
½ white onion, chopped
2 cloves of garlic
1 cup Broccoli, chopped
1 T chilli powder
2 tsp cumin
½ tsp oregano
½ tsp paprika
Salt and pepper

Heat coconut oil in a medium saucepan, add chicken and cook until brown. 
Add onions, garlic and seasonings, cook until fragrant.
Add vegetables, cover pan and let simmer for 5-10 minutes on a medium heat or until vegetables are just tender and chicken is cooked through.

 

Toppings

Cucumber thinly sliced
Spring onion chopped
1 tomato, sliced
Baby spinach
Avocado, sliced
Yoghurt
Chilli sauce
