Chicken and Leek pie is a fantastic, healthy, protein and vegetable filled family favourite! Not only can it be whipped up in about 30 minutes, chicken is one of the leanest forms of protein you can get! Many people find healthy food boring - we're here to remind you that it doesn't have to be!

Here, we have a chicken and leek pie made from fresh ingredients! (Though we did buy the pie pastry!)

The Recipe...

Pan fry

2 cloves of garlic

1 onion

Ginger in coconut oil until fragrant and soft.

Add 4 chicken breasts in 1cm cubes and pan fry until cooked through. Avoiding redness but also burning.

Add chopped vegetables of choice, we used carrots, peas, leeks and broccoli. Steam gently until cooked through. Sprinkle fresh herbs on top – basil / coriander / parsley for example.

Add half a cup of chicken stock and cornflour and stir until thick. Reduce until you have a nice consistency gravy.

Pour chicken and vegetable mixture into dish, and top with pastry.

Oven bake for 180 degrees C for 20 minutes or until pastry is golden and crispy.
